Trout With Sour Cream

Serves 4 Preparation time: 15 minutes (Cooking time: 30 minutes

4 medium trout (say, 275-350g)

275ml soured cream

juice of half a lemon

I teaspoon chopped chives

I apple, finelygrated

freshly ground white pepper, salt

50g/2ozfresh breadcrumbs

 

Pre-heat the oven to 200C/400F/ gas Mark 6.

Gut and clean trout, removing heads and tails. Mix all ingredients, except breadcrumbs, together to make the sauce.

2 Place the trout in an open casserole. pour the sauce over, sprinkle top with breaderumbs and bake uncovered for 2530 minutes.

Serving suagestion: Jerusalem artichokes and french beans would make pleasant accompaniments.
